Easy recipe: Coconut potatoes in caramelised onions

Whether you're feeding the family or craving a cosy solo meal, this fragrant, comforting recipe is perfect for this cold weather.

What you will need:

1 large sliced onion

1 tomato, roughly cut 

130ml coconut cream 

1 lime 

3 green chillies 

1kg sliced potatoes 

1 teaspoon garlic ginger paste 

1 teaspoon turmeric 

1 teaspoon black pepper 

2 tablespoons of oil 

Salt to taste

500ml water

Coriander for garnish 

2 onions fried until golden 

What to do:

In a hot non-stick pan, pour in the oil, add in the onions and sauté until soft, add in garlic, ginger paste, tomatoes, whole green chillies, turmeric, black pepper, potatoes, salt to taste, half of the coconut cream and water. Let it cook until the water has reduced completely and the potatoes are cooked. Use a small knife to test the tenderness of the potatoes. Don’t want to serve half-cooked potatoes because sometimes some kinds of potatoes take more time to cook. Once soft enough (also ensure you don’t overcook them) 

Add in the lime juice and the remaining coconut cream on top, let it cook for another 5 minutes over medium heat and finish off with coriander and fried onions on top, then serve as a meal on its own. Enjoy!
