
The weekend is finally here, and what could be better than a meal of sautéed chicken with coriander and capsicum?
What you will need:
1 whole chicken, cut into eight pieces
1 diced onion
2 diced capsicums
1 teaspoon of garlic and ginger paste
1 teaspoon of black pepper
Juice of one lime

1 chicken bouillon cube
Salt to taste
1 tablespoon vegetable oil
1/2 bunch of chopped fresh coriander
What to do:
Add the oil to a pot and sauté the onions until soft. Add the garlic and ginger paste and mix well. Now add the sweet pepper and black pepper and continue to mix with a spatula.
Then add the chicken chunks and combine well. Cover with a tight lid and cook until the chicken produces its natural juices.
Remove the lid after 6–7 minutes, crumble in the bouillon cube, adjust the seasoning with salt, add the juice of one lime, and continue to cook until all the liquid has almost evaporated and the flavours have coated the chicken.
Finish off with some fresh coriander, and serve with plain rice and yoghurt, or ugali and kachumbari. Enjoy!
